INGREDIENTS:
• 2 wholemeal seeded burger buns
• 2 lean beef burgers
• 1 tomato, sliced
• 4 lettuce leaves, washed
• 1 avocado, peeled and de-seeded
• 1/2 red onion, finely sliced
• 2 fresh pineapple slices
• 1 avocado, peeled and de-seeded
• 4 tbsp chilli jam
• 3 tbsp low-fat mayonnaise
• 1 tsp dried mixed herbs
• 4 tbsp coconut oil
• Juice of 1 lime
• Salt and pepper, to season
DIRECTIONS:
1. Rub the burgers with 2 tbsp coconut oil, ensuring it is covered all over. Season the burgers with salt and pepper.
2. Using a fork, prick the burgers through the middle. This will allow the heat to reach the middle of the burger whilst cooking.
3. Heat a griddle pan (or grill) on a medium heat. Add the burgers onto the pan and cook on each side for 6-7 minutes. Leave to rest on the side for 2 minutes.
4. Whilst the burgers are cooking, mash up the avocado with the remaining coconut oil, lime juice and salt and pepper. Leave to one side
5. Add the pineapple slices and the burger buns to the griddle pan and char each side for around a minute.
6. Mix the mayonnaise with the mixed herbs.
7. Now time to assemble the burger! Spread the chilli jam over the bottom half of the bun and layer the lettuce, tomato slices and red onion on top.
8. Layer the burger on top and spread the mayonnaise and smashed avocado over it. Top with the seeded bun. Serve.
