INGREDIENTS:
• 1 sweet potato, cut into wedges
• 1 clove garlic, crushed and chopped
• 3 tbsp olive oil
• 1 tbsp cous-cous
• 1 tbsp mixed herbs
• Salt
DIRECTIONS:
1. Pre-heat the oven to 200C/400F/gas mark 6.
2. Mix the sweet potato, herbs, cous cous, olive oil and garlic together in a bowl.
3. Put onto a baking tray and in the oven for 30 minutes.
4. Serve
