INGREDIENTS:
• 2 eggplants, sliced
• 5 tbsp olive oil
• 1 tsp dried mixed herbs
• Pinch of salt and pepper
• 5g feta cheese
• 1/2 lemon
• Handful of chopped parsley
• Drizzle of olive oil
DIRECTIONS:
1. Marinade the eggplant in the olive oil, mixed herbs, salt and pepper for 10 minutes.
2. Heat a grill or griddle pan and place the eggplant slices on the grill for 2-3 minutes each side.
3. Put the eggplant slices on a plate and crumble over the feta cheese. Squeeze the lemon juice and drizzle the olive oil over.
