INGREDIENTS:
• 1 chicken breast
• 1 wholewheat baguette
• 1 tomato, sliced
• Handful of sliced lettuce
• 4 slices mozzarella
• 2 tbsp Greek yoghurt
• 1 tbsp basil pesto
• Salt and pepper
DIRECTIONS:
1. Bring a saucepan of water to the boil and add in the chicken breast. Cook for around 8-10 minutes. Shred the chicken into pieces.
2. Once shredded, mix the chicken with the pesto, yoghurt, salt and pepper together.
3. Assemble your sandwich by placing the lettuce and tomatoes in the baguette and topping with the chicken pesto mix and the mozzarella. serve.
